Cheesy Meatball Pockets

The backpacks are packed, the alarms are set and the school-year schedule is officially in motion. Between early mornings, after-school activities, homework and everything in between, Missouri families need meals that can keep up. Enter beef.

With 10 essential nutrients, including protein, iron and zinc, beef is a flavorful, versatile protein that can help families power through busy school days. And getting a satisfying meal on the table doesn’t have to mean spending hours in the kitchen.

We're serving up three easy recipes made for the back-to-school rush:

Start Strong: Shredded Beef & Egg Quesadillas

Breakfast doesn’t have to be boring. Shredded Beef & Egg Quesadillas combine cooked beef, scrambled eggs, cheese and green chilies in a crispy tortilla for a breakfast that brings serious staying power.

Ready in 20 minutes with 30 grams of protein per serving, they’re a smart way to start the school day and/or an easy option for lunch or dinner when schedules get hectic.

 After-School MVP: Cheesy Meatball Pockets

When everyone walks through the door hungry, reach for Cheesy Meatball Pockets. Beef meatballs, marinara, tomatoes and melty cheese are tucked inside golden biscuit dough for a handheld meal that feels like a fun upgrade to a childhood favorite.

Ready in 30 minutes, they’re perfect for an after-school bite, quick dinner or pre-practice fuel.

 Leftover Glow-Up: Beef Brisket Taquitos

Got leftover brisket from the weekend? Don’t let it sit in the fridge. Give it a leftover glow-up with Beef Brisket Taquitos.

Smoked brisket gets combined with cheese, salsa and caramelized onions, rolled into corn tortillas and crisped in the air fryer. Ready in 30 minutes, they’re an easy way to turn leftovers into a meal everyone will want seconds of.

Make Back-to-School Meals Easier

A little meal prep can go a long way during the school year. Keep cooked beef on hand, plan for leftovers and choose recipes that can flex with whatever your family has in the fridge.

From breakfast before the bus to dinner after practice, beef makes it easy to serve meals that are delicious, satisfying and ready to keep up with the school-year hustle.

About the Beef Checkoff

The Beef Checkoff Program was established as part of the 1985 Farm Bill. The checkoff assesses $1 per head on the sale of live domestic and imported cattle, in addition to a comparable assessment on imported beef and beef products. States may retain up to 50 cents on the dollar and forward the other 50 cents per head to the Cattlemen's Beef Promotion and Research Board, which administers the national checkoff program, subject to USDA approval.
